autumn vegetable soup

Celebrate the first day of fall with this colorful, nutrient packed, and tasty soup! The recipe is from... no surprise, Fine Cooking. It cooks up real fast, though cutting the veggies takes up more than half of the preparation time.  Find it here. And Happy Fall!

ps. This was my first time using kale and it is surprisingly great!

Thanks for all the great recipes, Anj. This one looks delicious! I'm going to try it. I have a whole garden overflowing with kale right now, so I need ideas. If you're liking kale, you should try this kale salad. It's sooo good, we eat it at least once a week. Koen (3 yr. old) likes it, even! I substitute dried cranberries for the currants, and toasted pumpkin seeds rather than sunflower. Also, I skip the cheese.
