4th feast

I went easy street for this meal, and so yes it was simple, but also healthy and delicious. Here is the cast of our 4th of July din.

Act I: sides

seedless watermelon

salad with mixed greens, grapefruit, avocado and pistachios
Found this recipe at Cup and Table. *I didn't love the grapefruit - a little too bitter for me, so I used orange the next time and it was wonderful!

tots
kids love the tots

Act II: main dish

veggie and black bean burgers.
I didn't want to spend a lot of time making my own, so I bought the next best thing, Morning Star patties. Like I said, HD and my Dad pulled faces and claimed they were being robbed on the 4th without beefy burgers but in the end they were happy and actually liked them.

Act III: dessert

Grandpa Jones' Pineapple sherbet.

I took photos in a step by step fashion and this is worthy of it's own post. Coming soon...

Loved our fun July 4th dinner. You are an awesome cook and though I had never had veggie or black bean burgers, I was very pleasantly surprised myself.
